Cognac
Processing method
Cognac is got after distillation of a white wine produced from Ugni blanc and Colombard varieties. Once gathered, the grape is juiced up and the juice that flows slowly will naturally ferment during 10 days. Neither additive or preservative are used in the course of wine making process and preservation; this enables us to get a very pure wine.
Next, and for 2 months, we will distil our harvest in the family pot still, which has been installed in the domain since three generations. This is the way we will give birth to the Cognac brandy that afterwards is placed in oak barrels and can start then a very long ageing.
Taste test
Cognac : The smell is fine, elegant, with flavours of flowers, fruits in alcohol that reveal the earth of fine wood. The colour shows a beautiful shade of golden yellow. In the mouth, you will discover the ardour of this young Cognac, really powerful and endowed with a very good aromatic length. A cognac to sample as pre-dinner drink on-the-rocks or sometimes added with a soda or as a liqueur with a high-quality chocolate.
Pineau des Charentes
Processing method
The Pineau des Charentes combines harmoniously Cognac and grape juice. During the harvest, the juice of fresh-picked grapes is collected under the grapepress and mixed with Cognac. After having spent several years of ripening in oak barrels, we get a refined and harmonious beverage: the Pineau des Charentes.
To get the better processing for our Pineau, we always select our oldest plots, which are about 50 years old to take advantage of a perfect ripeness.
Taste test
This Pineau shows a light yellow colour, an intense smell with some touches of quince, fruits in alcohol citrus fruits and Rancio. The taste manifests a real sourness that balances sugars and aromas that evoke childhood memories: Tatin tart that just comes out from the oven, cooling quince paste. Try it as pre-dinner drink or with a chocolate fondant.
Wines : Bellevues' vintages
White wine : processed from Sémillon and Colombard varieties, the whole of the vintage ferments and grows in oak barrels.
Taste test
The fat of the Sémillon and the liveliness of the Colombard, a successful combination. Nice light colour with green reflection, delicate smell, complex, with touches of citrus fruits, green apples, honey and vanilla. In the mouth this wine shows an interesting fat, a well balanced sourness and a good aromatic length. Test it with a fish or crustaceans.
Red wine : 100% Merlot vintage, the vine is managed to produce a small yield (30 hl/ha); two weeks of maceration is followed by a growth in barrel that will last 6 months.
Taste test
A pure Merlot that presents a red cherry colour, a pleasant smell with some touches of liquorice, red fruits in alcohol, vanilla and oak. The taste, still young, shows a structure rich in tannin and a very light touch of bitterness, that requires to keep this wine quiet in the cellar for one or two years.
Pétillant de raisin (sparkling wine)
Processing method
This sparkling wine is exclusively processed from grape juices partially fermented. The fermentation will be stopped when 3 % of alcohol is reached. Then, the beverage got will develop fruity aromas with a sweet taste lightly gaseous.
Taste test
You can drink the “Pétillant de raisin” at any moment of the day and it is suitable to a wide range of consumers and to many occasions (pre-dinner drink, dessert, cocktail).
